Forms

  • Frying Pan / Skillet — A shallow, flat-bottomed pan with sloped sides, used for frying, searing, and sautéing.
  • Pan (generic) — A catch-all form for material-defined pans whose exact shape (skillet vs saucepan) is not specified.
  • Saucepan — A deep, straight-sided pot with a long handle and lid, used for simmering sauces and liquids.
  • Sauté Pan — A wide pan with tall straight sides and a lid, giving more volume than a skillet for sautéing.
  • Wok — A round- or flat-bottomed, high-sided pan for high-heat stir-frying.
  • Dutch Oven — A heavy, thick-walled lidded pot (often enameled cast iron) for braising and stewing.
  • Stockpot — A tall, large-capacity pot for boiling stock, pasta, and soups.
  • Griddle / Grill Pan — A flat or ridged cooking surface for pancakes, grilling, and indoor griddling.
  • Roasting Pan — A large rectangular pan for roasting meat and vegetables in the oven.

Materials

  • Carbon Steel — Steel with higher carbon than stainless; lighter than cast iron, seasons to nonstick, tolerates high heat.
  • Copper — An excellent heat conductor with responsive temperature control; reactive, so usually lined.
  • Ceramic — An inorganic non-metallic solid; used as a ceramic nonstick coating or a glassy body.
  • Stone — A stone-derived or stone-like composite, often a mineral-reinforced nonstick coating.
  • Glass — A nonreactive transparent material for oven/baking vessels and lids.
  • Titanium — A light, strong metal; in cookware it usually appears as a coating or reinforcement.
  • Plastic — A polymer used for handles, lids, and accessories — not for cooking surfaces.
  • Silicone — A heat-resistant flexible polymer used for utensils, gaskets, and handle grips.
  • Nonstick (unknown base) — A nonstick surface whose base material is unspecified.
  • Mixed — Products that combine multiple materials.
  • Unknown — Material or coating not identified in the source data.

Coatings

  • None (bare) — No coating — bare metal that may be seasoned to build a natural nonstick patina.
  • PTFE Nonstick — A polytetrafluoroethylene (Teflon) nonstick coating.

Concepts
